What does elasticity mean?

Elasticity describes the ability of a substance to be stretched or compressed, then return to is normal shape.

Stretch a rubber band, then release it. The molecules making up the rubber band can be stretched, but the stretched molecular structure pulls itself back into its original shape when the outside force (your pulling on its ends) is removed.
